Not a Typical Monday

This Monday started off not too bad. Woke up a little late but still had time to get prepared for the day after teaching with getting dinner ready. This recipe was SO easy!!
All you need:
taco seasoning (1package)
chicken (4 skinless/boneless breast)
salsa (16 oz I used mild)




Throw it all in the crock pot stir a little and depending on how long you are going to need to have it ready when you walk in the door decides if you leave it on low for 6-8 hours or cook it on high for 4-6 hours. Being a teacher I was unsure of which I would need because I am normally out of the house for 12 hours if not longer. Thankfully I have a great roommate that turned the crock pot on high at 2:30 so when I walked through the door at 630pm it was ready to eat. All I had to do was shred the chicken and put it in a tortilla add some cheese, lettuce and salsa and it was AMAZING!

Before eating though I went to a kickboxing class with the roommate. I was so much fun and helped me let go of some frustration that had built up throughout the day. Teaching is never an easy job and when you had added stressors like an abroad job fair approaching or other drama in your life then a great workout always seems to help out in any situation. I normally go out for a run but I feel as though I have just adopted a new Monday ritual with the roommate.

After eating my wonderful dinner I embarked on a new baking adventure. This Friday at my school we are holding a bake sale to raise money so we can purchase t-shirts for all those students who are exceeding on our quarterly benmarks that my schools gives out. Me being the overachiever that I am decided to try out something new and that was to make Red Velvet Cake Cookies. 
All you need is:
1 box of red velvet cake mix
1 cup of all purpose flour
1/2 cup of unsweetened applesauce
1.5-2 cups of white chocolate chips
1.5 sticks of butter, softened
1 large egg









Leave butter out to soften and preheat oven to 350F.  Once softened, beat with a hand-mixer until fluffy.  Next, slowly add flour and cake mix until incorporated.  Next add your egg and applesauce then mix completely.  Fold in white chocolate and roll dough into 1 inch balls.  Place on a bare cookie sheet and bake for approx. 10 minutes.  Allow to cool for 2 minutes on the baking sheet and then transfer to a cooling rack.  Yields about 24-32 small cookies.

I would have to say that my first batch turned out the best the second I got a little antsy and took them out of the oven a little too early. I also had to double to recipe inorder to make enough for the bake sale but I feel as though they are going to be a hit! 

My only regret is that I did not have the time to add the special touch with the wrapping of these. I wish I had a little more time then I would have added ribbon to the baggies. 

Tomorrow I am going to try my hand in making some meatloaf. Wish me luck so far this baking/cooking adventure is turning out pretty well and I am enjoying myself while learning some new traits in life. Now I am off to get everything lined up and inorder for the rest of the week :)
